
Kady woke up this morning requesting a ‘big breakfast’. One of the family traditions in our household is what we call “The Big Breakfast“. We usually cook a big breakfast with all the trimmings. This will usually satisfy everyone for most of the day.
The thing I like about The Big Breakfast is that it is a great way to use up any leftover produce I have from the previous week. Each time we make it, it turns out a little different. Here is what we had laying around this week that needed to be used:
- Wasabi Sweet Potato fries (homemade and leftover from the last night, about 2 cups)
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 3/4 yellow onion
- 2 green onions
- 1/2 zucchini
- 1 stem fresh rosemary
- 4 eggs
It is super easy to make. Just chop up all the veggies and cook them up in a pan (until they are tender or they way you like them, usually 7-15min) and top with eggs for the last few minutes.
(This time I did not add any spices because the Wasabi Fries had extra seasonings that I thought would cover what we needed in the omelet. The Wasabi Fries had (wasabi powder, xylitol, dulse. rice vinegar).
It makes about 4 servings. Serve with sliced oranges (instead of OJ) and you have just fed your family a plate full of vegetables and 1 egg each. This is an awesome way to start your family’s day.
